Taco Tuesday

1. Rice- transfer to a microwave safe dish and heat for 3-4 minutes or until thoroughly warmed or transfer to oven safe dish, cover with foil and heat in oven at 350 degrees for 15-20 minutes.

2.Beans- transfer to microwave safe dish, (optional) add a splash of water, cover with wet paper towel so it doesn't splash, heat for 3-4 minutes in microwave.  Stove top is a good option but more work.

3. Protein- you can follow instructions for beans, do not add water, and microwave for 3-5 minutes.  My preferred method is on the stove top, transfer to a small-medium pan, cover with lid, stir every minute or so, use medium to high heat for 5-7 minutes.  Do not walk away because you will be sad if you burn it.

4. Tortillas- I use my electric skillet, but you can use a non-stick large flat pan, set on high, you can warm up about 5 tortillas at a time, spread them out, flip after about a minute, heat for another minute, remove and place in a tortilla warmer or foil paper.  Warm up all your tortillas at once.    ****Do not microwave****

Pozole, Caldo Tlalpeno or any other soup!

Transfer soup to medium pot, turn heat on high, let it simmer for 3-5 minutes or until it reaches desired temperature.  Enjoy with garnishes!

Tostadas de Tinga

3. Chicken- you can follow instructions for beans, do not add water, and microwave for 3-5 minutes.  My preferred method is on the stove top, transfer to a small-medium pan, cover with lid, stir every minute or so, use medium to high heat for 5-7 minutes.  Do not walk away because you will be sad if you burn it.

4. Step by step on creating the perfect tostada:

-lightly coat your tostada with sour cream, add lettuce, chicken, avocado, queso fresco, cilantro and a little lime!!!

Enchiladas

Rice, Beans and Happiness

1. Rice- transfer to a microwave safe dish and heat for 3-4 minutes or until thoroughly warmed or transfer to oven safe dish, cover with foil and heat in oven at 350 degrees for 15-20 minutes or until it reaches desired temperature.

2.Beans- transfer to microwave safe dish, (optional) add a splash of water if needed, cover with wet paper towel so it doesn't splash, heat for 4-5 minutes in microwave.  Stove top is a good option but more work.

3. Enchiladas-preheat oven to 350 degrees, remove from packaging and place in a 7x11 baking dish, pour green sauce over enchiladas, add cheese if desired. Cover with foil paper and place in oven for 40 minutes or until internal temperature reaches 170 degrees or desired temperature. 

Birria

1. Rice- transfer to a microwave safe dish and heat for 3-4 minutes or until thoroughly warmed or transfer to oven safe dish, cover with foil and heat in oven at 350 degrees for 15-20 minutes.
 
 2.Beans- transfer to microwave safe dish, (optional) add an ounce of water if needed, cover with wet paper towel so it doesn't splash, heat for 3-4 minutes in microwave.  Stove top is a good option but more work.
 
 3. You can take this time to make quesa-birrias (quesadillas with protein of choice) make sure you add your garnishes, especially cilantro and onion mix.
 
 5. Consomé, heat up your soup, stovetop or microwave works just fine. 

6. Dip your taco in consome!!!
